Dark Chocolate Covered Almond Butter and Fig Bites

Three ingredients come together for this yummy and decadent treat! These bites are the perfect offering for a potluck, and no one will know they are healthier than store-bought desserts! There is no added sugar or processed foods, and they are great for the kids as well!

Equipment

  • Blender or food processor

Ingredients

  • 10 oz. dried figs (with tips, stems and bottoms removed)
  • 5 Tbsp. creamy almond butter
  • 2 Tbsp. water
  • ½ cup 70% dark chocolate chips or chunks
  • 1-2 Tbsp. flaked sea salt (optional)

Instructions

  • Line a small baking sheet with parchment paper.
  • In a high-speed blender or food processor, combine dried figs, almond butter and water. Mix until smooth and well combined. Scrape the sides with a rubber spatula as needed. If you do not have a high-speed blender or a food processor, chop dried figs as small as you can and mix them in a large bowl with creamy almond butter and water using a large metal spoon.
  • Using your hands, roll the mixture into 1” balls and place on the parchment-lined paper.
  • While you mix your figs, melt chocolate either in a double boiler on the stovetop over low heat or in a microwave-safe bowl in the microwave in 30-second intervals. Stir in between to ensure even melting.
  • Using a toothpick or a fork, dip one ball at a time in melted chocolate. Cover the balls with the chocolate and let the excess drip back into the bowl. Return the chocolate covered balls to the parchment-lined paper. Continue until each ball is covered in chocolate.
  • If desired, top the balls with flaked sea salt. Place the baking sheet in the fridge to let them set until firm, about 30 minutes. Enjoy!

Notes

  • Store the balls in an airtight container in the fridge for up to one week.
  • Other dried fruit will work well here, too. Try apricots, dates or raisins!
  • Another nut butter will work as well: peanut butter, cashew butter, sunflower butter, etc.
