Broccoli Salad

  • 2 medium heads of broccoli (chopped with stalks discarded)
  • 1 bunch green onion (chopped)
  • 1/3 cup roasted pumpkin seeds or nuts of your choice
  • 1/3 cup dried cranberries or raisins


  • 1/2 cup low fat plain yogurt
  • 2 Tbsp. olive or canola oil
  • 1 1/2 Tbsp. apple cider or white vinegar
  • 1 Tbsp. honey
  • 1/2 tsp. salt
  • 1/4 to 1/2 tsp. ground black pepper


  • Place the chopped broccoli, onion, seeds and dried fruit in a large mixing bowl.
  • In a small bowl, whisk together the yogurt, oil, vinegar, honey, salt and pepper until smooth.
  • Pour the dressing over the broccoli mixture and toss well until everything is coated. Allow the mixture to sit for about 20 minutes so the flavors can fully develop.
