2medium heads of broccoli(chopped with stalks discarded)
1bunch green onion(chopped)
1/3cuproasted pumpkin seeds or nuts of your choice
1/3cupdried cranberries or raisins
DRESSING:
1/2cuplow fat plain yogurt
2Tbsp.olive or canola oil
1 1/2Tbsp.apple cider or white vinegar
1Tbsp.honey
1/2tsp.salt
1/4 to 1/2tsp.ground black pepper
Instructions
Place the chopped broccoli, onion, seeds and dried fruit in a large mixing bowl.
In a small bowl, whisk together the yogurt, oil, vinegar, honey, salt and pepper until smooth.
Pour the dressing over the broccoli mixture and toss well until everything is coated. Allow the mixture to sit for about 20 minutes so the flavors can fully develop.
