Add all ingredients except water and olive oil to a food processor.
Pulse 10 times to get ingredients moving.
Add olive oil and pulse 5 more times.
Then begin adding 1/4 cup water, while fully processing. Stop processing once combined and mostly smooth, about 15 seconds. Transfer dip to a serving bowl and serve with raw vegetables, pita, crackers or chips.

If you like the thickness, you can leave it, or add more water. If you use a mixing bowl instead blender/processor, mash until desired consistency.
