Equipment

  • food processor or blender

Ingredients

  • 1 large ripe avocado
  • 1 cup frozen petite green peas (thawed)
  • 1/2 cup raw walnuts or pecans (chopped)
  • 1/2 bunch fresh parsley
  • 1 tsp. dried basil
  • 2 cloves garlic (crushed and minced)
  • 2 tsp. white wine vinegar
  • 1/2 tsp. kosher salt
  • 1/4 tsp. red pepper flakes
  • 1/4 - 1/2 cup water
  • 1/2 lemon (zest and juice)
  • 3 Tbsp. extra virgin olive oil

Instructions

  • Add all ingredients except water and olive oil to a food processor.
  • Pulse 10 times to get ingredients moving.
  • Add olive oil and pulse 5 more times.
  • Then begin adding 1/4 cup water, while fully processing. Stop processing once combined and mostly smooth, about 15 seconds. Transfer dip to a serving bowl and serve with raw vegetables, pita, crackers or chips.

If you like the thickness, you can leave it, or add more water. If you use a mixing bowl instead blender/processor, mash until desired consistency.
