These buffalo chicken air fryer bites are a perfect way to mix up your next chicken dinner! They combine simple seasonings with flavorful buffalo sauce and are perfectly paired with your choice of mixed veggies. Serve with a tangy Greek yogurt dipping sauce to balance out the heat. These bites are fun for a game day appetizer and easy enough for a weeknight family dinner.
Add diced chicken to a large bowl and mix in paprika, garlic powder, onion powder, chili powder, salt and pepper. Using clean hands, coat the chicken in the spices.
Add in cornstarch and mix again until chicken is evenly coated.
Place chicken in one layer in air fryer basket. You can cook in multiple batches if you need. Air fry for 7 minutes.
While chicken cooks, add buffalo sauce to a large clean mixing bowl.
In a separate bowl, add Greek yogurt, vinegar, honey, garlic powder, onion powder, salt and pepper. Mix well and set aside.
Once the chicken is cooked, carefully add it to the bowl with the buffalo sauce. Using a large spoon, stir the chicken bites in with the buffalo sauce, evenly coating the chicken with the sauce.
Place the chicken back in the air fryer basket and air fry for 2 minutes. Remove and let cool.
Ensure chicken is fully cooked (it should no longer be pink in the middle). Serve with sliced veggies and the prepared dipping sauce. Enjoy!
Notes
To bake in the oven, follow the same steps, baking chicken on a parchment lined baking sheet at 400 degrees for 10 minutes. Then, coat them in buffalo sauce and bake for an additional five minutes.
Make this BBQ chicken by subbing BBQ sauce for buffalo sauce.
Rice vinegar can be used in place of apple cider vinegar.
