Here is a dinner option for your store-bought rotisserie chicken or homemade shredded chicken. Just toss in cubed or shredded chicken with lettuce, red bell pepper and some light shredded cheese. Then top it off with Pico de Gallo, avocado, salsa, Greek yogurt and cilantro for a delicious salad without any added salad dressing. Feel free to add brown rice for more texture and whole grains!
If you need to cook your chicken, do that now. An easy method is to grill it or bake it at 350°F for 25-30 minutes, until the chicken reaches an internal temperature of 165°F.
Once the chicken is cooked, let it cool for a few minutes. Place it on a cutting board and either shred it with two forks or chop it into bite-sized pieces.
