Southwest Chicken Salad

Traditional chicken salad gets a flavor boost with southwest-inspired seasoning! Using plain Greek yogurt as the base, this chicken salad is creamy, crunchy and filling! Make it ahead for a potluck or whip up a serving for lunch. Serve in a whole grain tortilla, sandwich style on whole grain bread or in a bowl with a squeeze of fresh lime!

Ingredients

  • 1.5 lbs. cooked chicken (cubed or shredded)
  • 1 can black beans (drained and rinsed)
  • 1 green bell pepper (chopped)
  • 1 pint small baby tomatoes (halved)
  • 1 small red onion (diced)
  • ½ cup cilantro (chopped)
  • ¾ cup plain Greek yogurt, reduced fat
  • 1 Tbsp. lime juice (more to taste)
  • 1 Tbsp. taco seasoning
  • Salt and pepper to taste
  • 1 tsp. hot sauce (optional)

Instructions

  • In a large bowl, combine the cubed/shredded chicken, black beans, green bell pepper, tomatoes, red onion and cilantro. Sprinkle with salt and pepper, and gently combine using a large mixing spoon.
  • In a medium sized bowl, stir together the Greek yogurt, lime juice, taco seasoning and optional hot sauce.
  • Pour the Greek yogurt mix over the chicken mix, and gently stir in the sauce until combined well. Taste and adjust seasonings as needed, adding salt, pepper or additional taco seasoning.
  • Store in the fridge for 2-3 hours, allowing the mixture to chill and flavors to combine. Enjoy with a squeeze of lime juice!

Notes

  • Store bought rotisserie chicken is a great time-saving option!
  • For a vegetarian version of this recipe, add an additional can of beans and use less dressing.
  • Store leftovers in the fridge and eat within two days.
