A healthy breakfast toast with a fun, egg-free twist! This toast is packed with protein and a great way to start your day. Smoked salmon is the star of the show, with cottage cheese as the spread. Finish with store-bought pickled red onions for a sweet and tangy crunch and toasted sesame seeds for a rich, nutty flavor!

Ingredients

  • 2 slices whole wheat bread
  • ½ cup low fat cottage cheese
  • salt and pepper (to taste)
  • 4 oz. smoked salmon
  • 1 cup mixed salad greens
  • ¼ cup pickled red onions
  • toasted sesame seeds
  • 1 Tbsp. honey (optional)

Instructions

  • Toast your bread any way you prefer.
  • Spread ¼ cup cottage cheese on each slice and top with salt and pepper to taste.
  • Layer on 2 oz. smoked salmon and mixed salad greens on each slice. Top with pickled red onions.
  • Sprinkle with toasted sesame seeds and add an optional drizzle of honey on top. Enjoy!

Notes

• Look for whole wheat bread that has zero added sugars and at least 3 grams of fiber per serving.
• Not a fan of cottage cheese? Sub reduced fat cream cheese, using 1 Tbsp. per slice of bread.
• Look for pickled onions with no added sugar.
