Equipment

  • Zoodler (vegetable peeler)

Ingredients

  • 4 medium zucchini
  • Olive oil pan spray
  • Pinch of salt

Instructions

  • Use a zoodler to make zucchini noodles. If you don’t have a zoodler, use a vegetable peeler to create long strips of zucchini.
  • Preheat oven to 375°F. Spread the zoodles in a single layer over 1 or 2 sheet pans. Spray well with olive oil pan spray and sprinkle with salt.
  • Place the sheet pan(s) in the preheated oven, and roast until zoodles begin to brown and get crispy around the edges. Total cooking time will depend on the type of oven and size of zoodles.
  • Serve with your favorite pasta sauce or in place of traditional pasta noodles.
