Pizza Toast

This single-serve pizza toast starts with a thick, crusty slice of sourdough as the base and is crisped up with toppings in the air fryer (or oven) until golden. The twist of this toast is … high protein, creamy cottage cheese! Perfect for those work-from-home days or a lazy weekend brunch. Serve with a side salad for a complete, healthy and balanced lunch! This recipe can be multiplied as needed to feed the whole family.

Equipment

  • Air fryer

Ingredients

  • 1 large slice sourdough bread
  • cup jarred marinara or pizza sauce (plus more for dipping, if desired)
  • cup fat free or reduced fat cottage cheese
  • tsp. Italian seasoning
  • 5-7 slices turkey pepperoni
  • 4 large olives (sliced)
  • Fresh basil

Instructions

  • Preheat oven or air fryer to 400°F.
  • Layer marinara or pizza sauce on top of your bread slice. Layer on cottage cheese and sprinkle with Italian seasoning. Place turkey pepperoni and sliced olives on top.
  • Place in preheated oven or air fryer and cook for 9 minutes.
  • Remove from oven or air fryer and let cool slightly. Top with fresh basil and serve with a fork and a knife, with extra marinara for dipping sauce if you

Notes

  • Look for a whole grain sourdough if you can find it!
  • Other bread options: sliced whole grain bread, whole grain bagel or pita. Thicker bread will hold up better in this recipe.
  • Feel free to add any of your favorite toppings! Artichoke hearts or sundried tomatoes will also work well.
