Gluten Free Oatmeal Peanut Butter Chocolate Chip Cookies
This healthy oatmeal cookie is a satisfying treat that’s made with wholesome ingredients. Old-fashioned rolled oats form the hearty base, giving each cookie a chewy texture and nutty flavor. Creamy peanut butter adds richness and a dose of protein, while pure maple syrup naturally sweetens the dough.
Preheat oven to 350°F and line a large baking sheet with parchment paper.
In a large mixing bowl, add oats, baking powder, baking soda, salt and cinnamon. Whisk to combine.
To a medium mixing bowl, add creamy peanut butter, maple syrup, egg and vanilla extract. Whisk to combine.
Add the peanut butter mixture to the bowl with the dry ingredients and use a large rubber spatula to mix until just combined. Dough will be sticky.
Fold in the dark chocolate chips.
Using an ice cream scoop or your hands, add cookie dough to prepared baking sheet. Using the back of your spatula, press mixture down to ½” rounds. The mixture should make about 12 cookies. Bake in preheated oven for 12-14 minutes, until just starting to brown on the outside and bottom of cookies.
Remove from oven and let cool for 10 minutes before removing from cookie sheet. Enjoy!
Notes
You can sub honey for maple syrup.
Store cookies in an airtight container for up to 3 days.
