Gluten Free Oatmeal Peanut Butter Chocolate Chip Cookies

Ingredients

  • ½ cup creamy peanut butter
  • 1/3 cup pure maple syrup
  • 1 egg
  • 1 tsp. vanilla extract
  • 2 cups rolled oats (gluten-free)
  • 1 ½ tsp. baking powder
  • 1/8 tsp. baking soda
  • ½ tsp. salt
  • ½ tsp. cinnamon
  • ½ cup dark chocolate chips

Instructions

  • Preheat oven to 350°F and line a large baking sheet with parchment paper.
  • In a large mixing bowl, add oats, baking powder, baking soda, salt and cinnamon. Whisk to combine.
  • To a medium mixing bowl, add creamy peanut butter, maple syrup, egg and vanilla extract. Whisk to combine.
  • Add the peanut butter mixture to the bowl with the dry ingredients and use a large rubber spatula to mix until just combined. Dough will be sticky.
  • Fold in the dark chocolate chips.
  • Using an ice cream scoop or your hands, add cookie dough to prepared baking sheet. Using the back of your spatula, press mixture down to ½” rounds. The mixture should make about 12 cookies. Bake in preheated oven for 12-14 minutes, until just starting to brown on the outside and bottom of cookies.
  • Remove from oven and let cool for 10 minutes before removing from cookie sheet. Enjoy!

Notes

  • You can sub honey for maple syrup.
  • Store cookies in an airtight container for up to 3 days.
