These tostadas are a fun and satisfying dinner or appetizer option to add to your meal plan! Roasting the tortillas in the oven results in a better-for-you and more convenient dinner (but still crunchy!). Because the toppings are nutritious and very versatile, you can find a way to please the whole family!
Preheat the oven to 400°F. Heat a large skillet over medium heat and add olive oil.
Once oil is hot, add ground turkey and cook until browned, about 7-8 minutes. Stir in taco seasoning and a few tablespoons of water and cook for 2-3 minutes.
While turkey is cooking, add refried beans and Greek yogurt to a small skillet and heat on medium-low heat until warmed through, stirring occasionally to combine and prevent burning.
Once the oven is preheated, place the tortillas flat on a sheet pan and place in oven. Cook for 4-6 minutes, flipping halfway through. Once they are toasted, remove from oven and use tongs to transfer tortillas to a plate.
When turkey is cooked through and beans are warmed, remove from heat.
Use a spoon to spread the bean mixture on top of a tostada. Then layer on ground turkey, lettuce, tomato, cheese, avocado, cilantro and salsa. Enjoy!
Notes
• This can be made vegetarian by simply omitting the ground turkey. Add two tablespoons of taco seasoning to the black bean mixture as it heats.• If you can’t find refried beans, you can use regular drained black beans, mashing with a fork before mixing in Greek yogurt.
