Easy Roasted Sweet Potatoes

This recipe can be made in the air fryer or the oven!  The cubed sweet potatoes are roasted to a perfect crisp, and the skin adds an extra source of nutrients. Meal prep for the family or use this yummy side dish to feed a crowd!

Equipment

  • Air fryer

Ingredients

  • 2 large sweet potatoes, diced (½” cubes)
  • 1 Tbsp. olive oil
  • ½ tsp. salt
  • ½ tsp. garlic powder

Instructions

  • Preheat your air fryer or oven to 400°F. If roasting in the oven, line a sheet pan with parchment paper.
  • Place the diced sweet potatoes in a large bowl and add olive oil, salt and garlic powder. Toss to combine.
  • Line the sweet potatoes in an even layer on the sheet pan or in the air fryer basket. Be sure to space them out so they roast evenly (air fry in batches if needed).
  • If you’re using an air fryer, fry for 10-12 minutes. Remove tray and shake after 6 minutes. If you’re using an oven, roast for 30 minutes, removing and stirring after 15 minutes.
  • Remove from air fryer/oven and let cool. Enjoy!

Notes

  • These are best enjoyed right away but can be stored in the fridge for 3-4 days.
  • Do not allow sweet potatoes to touch. This will ensure that the outsides stay crispy.
  • Try adding paprika, chili powder or even curry powder for a fun flavor spin!
