28oz.can crushed or diced tomatoes(or try Shape Your Future 5 Minute tomato sauce)
1-2tsp.Italian Seasoning
8ounceswhole wheat bowtie or similar pasta
1cupshredded low fat mozzarella cheese
1/4cupfreshly grated Parmesan
1cupskim or low fat ricotta cheese
2Tbsp.chopped fresh parsley leaves
Salt to taste
Black pepper(ground) (to taste)
Instructions
Heat olive oil in a large pot over medium-high heat. Add Italian sausage and cook until browned, about 3-5 minutes, making sure to crumble the sausage as it cooks; drain excess fat.
In the same pan, stir in the can of tomatoes or Shape Your Future 5 minute tomato sauce and Italian seasoning.
Bring the mixture to a simmer, then stir in pasta and 2 cups water. Bring to a boil; cover, reduce heat and simmer until pasta is cooked through, about 13-15 minutes.
Remove from heat. Stir in mozzarella and parmesan until well combined. Using a spoon, top with dollops of ricotta and cover until heated through, about 2-4 minutes.
Serve immediately, garnished with parsley, if desired.
