This recipe uses a bag of frozen mixed vegetables and ground turkey for a quick and healthy weeknight family dinner. Designed to be a meal that can be created with ingredients stored in the freezer and pantry, this dinner is for those busy nights when a trip to the market is not an option!
For the roasted sweet potatoes: Preheat oven to 400°F. Line a sheet pan with parchment paper.
Place cubed sweet potatoes on the prepared sheet pan and drizzle with olive oil, ½ tsp. salt and ¼ tsp. pepper.
Place in oven and roast until lightly browned and crispy, about 30-40 minutes, stirring halfway through with a spatula. Remove from oven and set aside to cool slightly.
For the curry spiced ground turkey: Heat a large skillet over medium-high heat and add olive oil.
In a small bowl, add curry powder, salt, ground turmeric, coriander, cinnamon, ginger and pepper. Stir to combine.
Once oil is hot, add the onion and garlic. Stir well and cook until onion is soft, about 3-4 minutes.
Add ground turkey and continue cooking, breaking it up with a spatula. Cook until browned and cooked through.
Add spice mix and stir well to combine with the meat.
Add frozen vegetables, stir well to combine and cook for 3-4 more minutes.
Add broth and turn the heat down to medium. Continue to cook until veggies are tender and liquid has reduced.
Serve with sweet potatoes on a plate or in a bowl. Enjoy!
Notes
• You can also bake sweet potatoes whole and serve with the ground curry and veggies on the side.
• Option to serve with a side of brown rice instead of sweet potatoes.
