Whip up these bars for on-the-go breakfasts, lunch boxes or an easy snack. They are soft and lightly sweetened with mashed banana and maple syrup. The fiber from the oats and chia seeds helps keep you full and satisfied, fueling your body for whatever you need to tackle!
Preheat oven to 350°F. Lightly spray a 9x9-inch baking dish with cooking spray.
Place 1 cup rolled oats in a blender or food processor and blend or pulse until a flour-like consistency is formed. Add oat flour to a medium bowl along with remaining oats, chia seeds, cinnamon, baking powder and salt. Whisk together until mixed.
In a large mixing bowl, mash your ripe banana until smooth. To that same bowl, add milk, pure maple syrup or honey, melted butter, egg and vanilla extract. Whisk well to combine.
Add dry ingredients to the large mixing bowl with wet ingredients and gently stir to mix.
Fold in raisins. Once mixed well, add the mixture to your prepared baking dish and spread evenly with rubber spatula.
Place dish in the oven and bake for 28-32 minutes, until the top is beginning to brown.
Remove from oven and let it cool for 5-10 minutes, then cut into 9 pieces and serve. Enjoy!

To make this recipe dairy-free, you can use almond milk and coconut oil.
