This oatmeal is made from scratch and is bursting with cozy autumn flavors! Healthier and heartier than the processed kind that comes in packages, and sweetened with pure maple syrup, this oatmeal is refined-sugar free and full of fiber to keep you full for hours. It’s easy to make and cooks rather quickly for a busy weekday family breakfast!
Heat a large saucepan with a lid over medium heat and add olive oil.
Once hot, add chopped apples, ½ tsp. cinnamon and a dash of salt. Stir and cook until the apples are fork tender, about 6-7 minutes.
While apples are cooking, add rolled oats and chia seeds to a large bowl and whisk to combine.
Once apples are cooked, move to a plate and return the pan to heat.
Add milk, oat/chia mixture, pure maple syrup, vanilla extract, remaining cinnamon and ¼ tsp. salt to the warm pan. Mix well.
Bring mixture to a boil, then reduce heat to a simmer and partially cover with the lid. Stir occasionally until oats are cooked and tender — about 7-8 minutes. You can add more milk if it appears to be soaking it up quick.
Remove from heat and stir in or top with cinnamon apples. Divide into bowls and add your favorite toppings. Enjoy!
