Preheat oven to 375˚F, using convection if your oven has that setting.
In a medium bowl, toss the cauliflower florets in cornstarch.
Pour buffalo sauce over cauliflower and toss again.
Spread the coated cauliflower onto a sheet pan and spray well with pan spray or coat in olive oil. Place the pan in the oven and roast about 14 minutes, tossing and spraying again every 15 minutes.
Serve immediately with or without your favorite dipping sauce.
