Baked Cottage Cheese Breakfast Toast

Ingredients

  • 2 large slices sourdough bread
  • 2/3 cup reduced fat cottage cheese
  • Pinch of salt
  • ½ banana (sliced)
  • ¼ cup fresh blueberries
  • Pinch of ground cinnamon
  • 1 Tbsp. honey
  • 2 Tbsp. peanut butter (optional)

Instructions

  • Preheat oven or air fryer to 400°F.
  • If using peanut butter, spread 1 Tbsp. over each slice of bread. Evenly divide the cottage cheese and layer it on top. Sprinkle with salt.
  • Add sliced bananas, fresh blueberries, a sprinkle of cinnamon and a drizzle of honey.
  • Place in preheated oven or air fryer and cook for 9 minutes.
  • Remove from oven or air fryer and let cool slightly. Slice in half and enjoy!

Notes

  • Other bread options include sliced whole grain bread, whole grain bagels or pita bread.
  • For crunch, sprinkle some chopped walnuts or chia seeds after baking.
