Baked Cottage Cheese Breakfast Toast

This delicious breakfast toast is naturally sweet and packed with protein and for a simple, nourishing start to the day. This recipe features peanut butter and creamy cottage cheese topped with fresh fruit. A fun twist on toast that leaves you feeling satisfied and energized!

2 large slices sourdough bread 2/3 cup reduced fat cottage cheese Pinch of salt ½ banana (sliced) ¼ cup fresh blueberries Pinch of ground cinnamon 1 Tbsp. honey 2 Tbsp. peanut butter (optional)
Preheat oven or air fryer to 400°F.
If using peanut butter, spread 1 Tbsp. over each slice of bread. Evenly divide the cottage cheese and layer it on top. Sprinkle with salt.
Add sliced bananas, fresh blueberries, a sprinkle of cinnamon and a drizzle of honey.
Place in preheated oven or air fryer and cook for 9 minutes.
Remove from oven or air fryer and let cool slightly. Slice in half and enjoy!
Other bread options include sliced whole grain bread, whole grain bagels or pita bread.
For crunch, sprinkle some chopped walnuts or chia seeds after baking.
