Sunny Sardine Salad

Ingredients

  • 2 tsp. Dijon mustard
  • Zest and juice of 2 small lemons
  • 2 tsp. olive oil
  • 2 Tbsp. red onion (finely diced)
  • 4 tsp. parsley (finely chopped)
  • 4 tsp. basil (finely chopped)
  • 4 tsp. mint (finely chopped)
  • 2 3.75 oz. cans sardines packed in water, drained

Instructions

  • Add all your ingredients to a small mixing bowl, and mix with a fork.
  • Once combined, mash well with a fork and scoop on whole grain crackers.
