Ingredients

bag frozen vegetable seasoning
(onion, celery, bell pepper, etc.)

olive or canola oil

garlic

can chipotle in adobo
(chopped finely)

Optional Toppings
Sliced avocado

Instructions
Heat a medium soup pot over medium-high heat. Add oil and heat until shimmering.
Add frozen vegetables and cook 2-3 minutes.
Add garlic and cook 1-2 minutes.
Add beans, chipotle, tomatoes and stock. Simmer for about 15 minutes.
