Spicy Black Bean Soup

Ingredients

  • 1 10 oz. bag frozen vegetable seasoning (onion, celery, bell pepper, etc.)
  • 1 Tbsp. olive or canola oil
  • 2-3 cloves garlic (finely minced)
  • 2 15 oz. cans seasoned black beans
  • 1 7 oz. can chipotle in adobo (chopped finely)
  • 1 15 oz. can roasted tomatoes
  • 2 cups vegetable stock or water

Optional Toppings

  • Sliced avocado
  • Chopped cilantro
  • Tortilla strips
  • Shredded cheese

Instructions

  • Heat a medium soup pot over medium-high heat. Add oil and heat until shimmering.
  • Add frozen vegetables and cook 2-3 minutes.
  • Add garlic and cook 1-2 minutes.
  • Add beans, chipotle, tomatoes and stock. Simmer for about 15 minutes.
