- Spaghetti squash
- 1/2 Tbsp. olive oil
- Salt and pepper to taste
Preheat oven to 375°F and line baking sheet with parchment paper.
Slice the spaghetti squash in half lengthwise and scrape out the seeds with a spoon.
Rub the cut side of the squash with olive oil and sprinkle with salt and pepper.
Place cut sides down on the baking sheet and roast uncovered for 40-50 minutes.
Remove from oven and let squash cool, cut side up. Pull the flesh away from the sides with a fork to create spaghetti-like strands.
