Ingredients

  • 3 Tbsp. red wine vinegar
  • 2 Tbsp. olive oil
  • 1 Tbsp. minced shallots
  • 1 Tbsp. chopped fresh parsley
  • 1 tsp. Dijon mustard
  • 1/8 tsp. salt
  • 1/4 tsp. black pepper
  • 1 garlic clove (crushed)
  • 6 cups chopped romaine lettuce
  • 1/4 cup dried cherries (chopped)
  • 1/2 Tbsp. crumbled feta cheese

Instructions

  • Combine first 8 ingredients in a large bowl; stir well with a whisk.
  • Add lettuce, dried cherries, and cheese; toss gently to coat.
