Korean Style Turkey and Broccoli

Ground turkey cooked with spices and an easy homemade sauce makes for a weeknight dinner that’s better than takeout. Minimal chopping allows for simple prep and a quick clean up so you can enjoy more family time around the table.

Ingredients

  • 1 Tbsp. olive oil
  • lbs. ground turkey
  • ½ tsp. salt
  • tsp. minced garlic
  • ¼ tsp. ground ginger
  • 16 oz. frozen broccoli florets
  • For the sauce:
  • ½ cup low sodium chicken broth
  • ½ cup low sodium soy sauce
  • 1 Tbsp. honey (or pure maple syrup)
  • 1 Tbsp. toasted sesame oil
  • 1 Tbsp. rice vinegar

Optional toppings:

  • ½ cup green onions (chopped)
  • 1 Tbsp. toasted sesame seeds
  • Red pepper flakes

Instructions

  • Heat a large skillet over medium heat and add olive oil.
  • Add ground turkey and salt, breaking up turkey with a spatula. Cook until browned, about 7-8 minutes.
  • While turkey is browning, make the sauce. In a medium bowl, whisk together chicken broth, soy sauce, honey, sesame oil and rice vinegar. Set aside.
  • Add minced garlic and ginger to the browned turkey and stir until fragrant, about 30 seconds.
  • Stir in frozen broccoli and cook for 1-2 more minutes.
  • Add prepared sauce and stir to combine. Simmer for 10 minutes on medium to low heat.
  • Taste and add additional salt and pepper as needed. Serve over brown rice or brown rice noodles, top with optional green onions, toasted sesame seeds and red pepper flakes. Enjoy!
