Dinner from start to finish in under 30 minutes? Yes, please! These easy shrimp tostadas use just 5 ingredients and are packed with flavor. They’re perfect for busy weeknights, fun enough to serve as a party appetizer and easy to customize with your family’s favorite toppings.
Preheat the oven to 400°F. Lightly spray both sides of each tortilla with cooking spray. Place them in a single layer on a large baking sheet.
Bake the tortillas for 4–6 minutes, flipping halfway through. They’re done when crisp and lightly golden. Bake in batches if needed. Remove from the oven and set aside to cool.
While the tortillas bake, add the shrimp and taco seasoning to a large bowl. Toss until the shrimp are evenly coated.
Heat the olive oil in a large skillet over medium-high heat. Add the shrimp and cook for 2–3 minutes per side, or until pink and fully cooked. Transfer to a clean plate.
Reduce the heat to medium. Add the drained and rinsed black beans to the same skillet. Cook for 2–3 minutes, stirring occasionally, until warm.
Spread 2 Tbsp. guacamole on each crispy tortilla. Top with black beans and cooked shrimp. Chop the shrimp into smaller pieces if you prefer. Add your favorite toppings and enjoy!

No guacamole? Mash an avocado with a little salt and pepper instead.
