This cottage cheese parfait is a delightful and wholesome treat! The creamy cottage cheese serves as the rich base, providing a smooth and tangy contrast to the sweet, juicy strawberries. A low sugar granola is sprinkled in between and gives a satisfying crunchy texture. Sweetened with a touch of honey, this parfait works great as a breakfast, snack or evening sweet!

Ingredients

  • 1 ½ cups reduced fat cottage cheese
  • ½ tsp. cinnamon (divided)
  • 4-5 strawberries (chopped)
  • 2/3 cup low sugar granola
  • 1 Tbsp. honey (divided)

Instructions

  • Set two bowls or jars aside as you prepare ingredients.
  • Add about a 1/3 cup cottage cheese to bottom of each bowl or jar. Layer on a sprinkle of cinnamon, chopped strawberries, granola and a drizzle of honey. Repeat with remaining cottage cheese, cinnamon, strawberries, granola and honey (2 layers of each total).
  • Enjoy!

Notes

  • Sub low sugar granola for a chopped nut such as pistachios or walnuts for a yummy variation.
  • You can use any fruit, including blueberries, raspberries or chopped kiwi!
  • You can use plain yogurt or Greek yogurt in place of cottage cheese.
