Ingredients
SALAD
1
can of corn, drained and rinsed
(10 oz. bag of frozen corn, thawed)

small red onion, finely chopped

cloves
garlic
(crushed and finely minced)

can of black beans
(drained and rinsed)
1
bell pepper
(small diced)
1
cup
fresh cilantro
(chopped)
VINAIGRETTE
Zest and juice of 2 limes
1/4
cup
canola oil
1
tsp.
honey
2-3
tsp.
ground cumin
1/4
tsp.
black pepper
1/2
tsp.
salt
Instructions
In a mixing bowl, combine corn kernels, onion, garlic, beans, bell pepper and cilantro. Set aside.
In a small bowl, whisk together lime juice and zest, canola oil, honey, cumin, salt and pepper.
Pour vinaigrette over salad, stir to combine and serve.
