Spring mix greens

cup
yellow squash
1/4
red or green bell pepper
(or both)

Balsamic Vinaigrette
Instructions
Roast veggies in the oven at 350°F for 10-12 minutes or sauté in a small pan over medium heat.
Mix all ingredients in a bowl.
Add dressing and enjoy at home or on-the-go!
