Ingredients
SALAD INGREDIENTS

whole grain pasta
1
can beans of your choice, drained and rinsed
1/2
cup
chopped parsley
6
cups
chopped vegetables
Cherry tomatoes
Cucumbers
Zucchini
Bell pepper, any color
Shredded carrots
Onions
VINAIGRETTE INGREDIENTS

apple cider vinegar

cup
olive oil

Tbsp.
honey
1
Tbsp.
Italian seasoning
1/2
tsp.
salt
1/2
tsp.
ground black pepper
Instructions
Cook pasta as directed on package. Rinse with cold water and drain.
In a large bowl, combine cooked pasta, beans, parsley and your choice of chopped vegetables. Toss well.
Whisk together vinaigrette ingredients in a separate bowl.
Add vinaigrette to salad. Stir until ingredients are evenly coated.
Serve immediately or store in the refrigerator for up to a week.
Notes
This recipe makes a large batch. It’s the perfect healthy side to bring to a gathering!
