baby spinach
(chopped)

small tomato
(diced)

strips turkey bacon
(cooked and crumbled)

cup
shredded cheddar cheese

large eggs

milk
Salt and pepper to taste
Instructions
Preheat oven to 350°F.
Spray muffin pan generously with nonstick spray.
In a medium bowl, whisk together eggs, salt and pepper.
Add about 1 Tbsp. of greens, tomatoes, bacon and a sprinkle of cheese to each muffin slot.
Pour egg mixture into each slot, leaving a little room at the top.
Bake for 20 minutes. If the tops are not fully cooked, cook in 3-minute intervals until they firm up.
Notes
Add or substitute your favorite veggies including bell peppers, onions, kale or broccoli.
