15oz.can diced tomatoes(no salt added, if possible)
8cupswater or low-sodium vegetable broth
1/2tsp.kosher salt(optional)
Instructions
Place all ingredients in a large saucepan with a tight-fitting lid.
Bring to a rapid simmer, then reduce the heat and simmer for 20 to 30 minutes until lentils and vegetables are tender, but lentils still hold their shape.
