Ingredients
112” whole wheat tortilla
2Tbsp.hummus
3slicesdeli turkey meat
½cuparugula or baby spinach(shredded)
2tomato slices
2Tbsp.sprouts(optional)
Salt and pepper to taste
Optional Toppings
low fat mayonnaise
mustard
Instructions
Place the tortilla flat on a cutting board.
Spread hummus evenly over half of the tortilla. Sprinkle lightly with salt and pepper.
Layer turkey slices over the hummus. Add the spinach, shredded carrots, sliced tomato and sprouts. Follow with optional toppings.
Starting at the end with the turkey/veggie mix, tightly roll up the tortilla until rolled to the center. Fold both sides in about 1-2”. Then, continue rolling.
Using a sharp knife, cut in half at a diagonal. Enjoy!
Notes
Sub ham or chicken deli slices for the turkey. Sliced grilled or baked chicken also works!
There are endless toppings for veggie toppings! Other ideas include shredded beets, shredded Brussels sprouts, sliced red onion, sliced bell pepper, avocado, etc.
