Turkey and Veggie Hummus Wrap

A simple and tasty lunch that doesn’t require cooking? Yes, please! This turkey wrap is well rounded and is a good source of protein, healthy fats and fiber-filled veggies. Our “star”condiment, hummus, adds even more fiber to help fill you up!

Ingredients

  • 1 12” whole wheat tortilla
  • 2 Tbsp. hummus
  • 3 slices deli turkey meat
  • ½ cup arugula or baby spinach (shredded)
  • 2 tomato slices
  • 2 Tbsp. sprouts (optional)
  • Salt and pepper to taste

Optional Toppings

  • low fat mayonnaise
  • mustard

Instructions

  • Place the tortilla flat on a cutting board.
  • Spread hummus evenly over half of the tortilla. Sprinkle lightly with salt and pepper.
  • Layer turkey slices over the hummus. Add the spinach, shredded carrots, sliced tomato and sprouts. Follow with optional toppings.
  • Starting at the end with the turkey/veggie mix, tightly roll up the tortilla until rolled to the center. Fold both sides in about 1-2”. Then, continue rolling.
  • Using a sharp knife, cut in half at a diagonal. Enjoy!

Notes

  • Sub ham or chicken deli slices for the turkey. Sliced grilled or baked chicken also works!
  • There are endless toppings for veggie toppings! Other ideas include shredded beets, shredded Brussels sprouts, sliced red onion, sliced bell pepper, avocado, etc.
