  • 1 large sweet potato

SWEET POTATO SANDWICH:

  • Deli meat
  • Shredded low fat cheese
  • BBQ sauce (optional)

BBQ CHICKEN SWEET POTATO:

  • Shredded/Cubed chicken (rotisserie works great!)
  • BBQ sauce
  • Jalapeños

BROCCOLI AND CHEESE SWEET POTATO:

  • Broccoli
  • Shredded low fat cheese

TACO SWEET POTATO:

  • Ground turkey taco meat
  • Black beans
  • Avocado
  • Tomatoes
  • Shredded low fat cheese

BREAKFAST FOR DINNER SWEET POTATO:

  • Scrambled eggs
  • Cherry tomatoes
  • Turkey bacon
  • Avocado

Instructions

  • Wash and dry potato.
  • With a fork, poke several holes in potato and wrap in cling wrap.
  • Microwave for 5 minutes.
  • Assemble potato with your choice of ingredients listed above.
