Sunflower Firecracker Lettuce Wraps

Wrap
- 1 cup sunflower seeds
- 8 lettuce leaves (for wrapping, try butter, Boston, Bibb, romaine or iceberg)
- Sliced green onions and chopped cilantro for garnish (optional)
Sauce
- 1/2 cup peanut butter (natural)
- 1/3 cup low-sodium soy sauce
- 2 Tbsp. sesame oil
- 1/4 cup white vinegar
- 2 Tbsp. chili paste (like Sambal Oelek or Sriracha)
- 2 Tbsp. honey
- 1 Tbsp. ginger (grated or finely chopped)
- 1-2 cloves garlic (smashed and finely minced)
In a small bowl, combine sauce ingredients with a fork. Set aside.
Heat a medium sauté pan or skillet over medium heat. Add sunflower seeds and stir frequently until seeds begin to turn golden.
Pour sauce over sunflower seeds. Stir and heat through.
Divide seeds between lettuce leaves. Garnish with green onions and cilantro.
GREAT ADDITIONS/SUBSTITUTIONS
Try topping the wraps with shredded carrots to add a crunch.
