Strawberry Mint Salsa

Ingredients

  • 1 quart of strawberries (washed and diced)
  • 1/2 small red onion (finely diced)
  • 1 Tbsp. fresh mint (minced)
  • 1 small jalapeño pepper (finely diced, seeds removed to your liking)
  • 1 lime (zested and juiced)

Instructions

  • Add all ingredients to a medium mixing bowl and combine.

Notes

To prevent waste, use a paring knife to remove stems from strawberries. Try adding cilantro. For more spice, include more of the jalapeño seeds. For less spice, substitute red or green bell pepper for jalapeño. Try serving with whole grain tortilla chips, bell pepper scoops or as a topping for tacos.
