- 20 oz. dried split peas (green or yellow)
- 5 cups low-sodium chicken broth
- 2 cups water
- 1 meaty ham bone or 2 cups leftover ham
- 3 celery stalks (diced)
- 2 large carrots (diced)
- 1 large onion (diced)
- 2 cloves garlic (minced)
- 1 bay leaf
- 1/2 tsp. black pepper
- 1/2 tsp. thyme leaves
- 1 Tbsp. fresh parsley
Rinse peas and drain well.
Combine all ingredients except parsley in a 6-quart slow cooker.
Cover and cook on high for 4-5 hours or on low for 8 hours.
Discard bay leaf. Stir in parsley and season with salt and pepper to taste.
