Slow Cooker Salsa Lime Chicken

This slow cooker dinner is prepared with just a few ingredients and is a solid dinner option for a busy weeknight. The chicken thighs and veggies simmer with the taco seasoning, salsa, cilantro and lime for a flavorful meal! Toss it all in and come back later for a versatile way to enjoy your protein and veggies. We like it served in whole grain or corn taco shells or over brown rice with a dollop of plainGreek yogurt on top!

2 lb. chicken thighs 1 packet low sodium taco seasoning 1 large red bell pepper (chopped) 1 large zucchini (chopped) 16 oz. salsa 1 cup cilantro (chopped) 3 limes (juiced)
Add ¼ cup of your salsa to the bottom of your slow cooker. Add chicken thighs and sprinkle in half of the taco seasoning packet.
Layer chopped bell pepper and zucchini over the chicken thighs. Sprinkle the remaining taco seasoning over veggies.
Pour your remaining salsa over veggies. Sprinkle in chopped cilantro. Finally, add the juice of three limes.
Cover and cook on high for 3-4 hours or on low for 7-8 hours.
When the chicken is done cooking, remove from slow cooker and place on a clean cutting board. Shred it using two forks and return to slow cooker.
Using a slotted spoon, serve chicken and veggies over brown rice or in taco shells. Enjoy!
You can make this with a variety of veggies: mushrooms, yellow squash, red onion, etc.
You can sub chicken breasts for chicken thighs.
