Side Salad with Easy Ranch Dressing

Sometimes, a simple side salad is all you need! This easy recipe combines fresh spring mix with a creamy homemade ranch dressing made with Greek yogurt. It’s an easy way to add more greens to your meal, plus a boost of protein from the Greek yogurt. Serve it with your family’s favorite dinner for a fresh and flavorful side.

Ingredients

For the ranch dressing: (makes 2 cup)

  • 1 packet ranch dressing seasoning
  • cups plain Greek yogurt
  • ½ cup reduced fat milk

For the salad:

  • 6 oz. bag of spring mix salad
  • 1 cup baby tomatoes (halved)
  • 1 cucumber (sliced in half moons)
  • 1 cup shredded carrots

Instructions

  • Add the ranch seasoning, Greek yogurt and ¼ cup milk to a bowl or mason jar. Stir or shake until smooth. For a thinner dressing, add more milk 1 Tbsp. at a time until it reaches your desired consistency. Set aside while you make the salad.
  • Add the spring mix, tomatoes, cucumber and carrots to a large bowl. Toss to combine.
  • Divide the salad evenly among 4 bowls. Top each with 1–2 Tbsp. ranch dressing and enjoy!

Notes

  • Have leftover ranch? This recipe makes about 2 cups. Store extra dressing covered in the fridge and use within 5–7 days.
  • Make it a meal! Add grilled chicken, extra veggies and avocado.
  • Turn the ranch into a veggie dip! Leave out the milk for a thicker, creamier ranch that’s perfect for dipping fresh veggies.
