Ingredients

  • 1 ½ cups reduced fat cottage cheese
  • 1/3 cup canned pumpkin puree (not pumpkin pie)
  • 2 Tbsp. pure maple syrup
  • 3/4 tsp. pumpkin pie spice
  • 6 pecans
  • 1 Tbsp. chia seeds

Instructions

  • Set two bowls or jars aside as you prepare ingredients.
  • Add cottage cheese, canned pumpkin, 2 Tbsp. maple syrup and pumpkin pie spice to a blender or food processor. Blend until you’ve reached a smooth consistency and mixture does not appear grainy.
  • Taste and add more maple syrup until you’ve reached your desired level of sweetness.
  • Pour into bowls or jars and place in fridge to chill for 10-30 minutes.
  • Top with pecans and chia seeds.

  • Top with low sugar granola for a fun breakfast.
  • Top with pomegranate seeds and dark chocolate chips for a tasty dessert.
  • You can use plain yogurt or Greek yogurt in place of cottage cheese.
