Oven-Baked Maple Dijon Chicken

This oven-baked maple Dijon chicken is an easy weeknight dinner made with minimal ingredients. The result is a flavorful dish that’s great for meal prep or even hosting. Serve the chicken on a salad, with roasted potatoes and steamed broccoli or shredded in a wrap!

Ingredients

  • 3 Tbsp. avocado oil mayonnaise
  • ¼ cup Dijon mustard
  • ¼ cup maple syrup
  • 1 tsp. paprika
  • 1 tsp. garlic powder
  • 1 tsp. salt
  • ½ tsp. black pepper
  • 1 ½ lbs. boneless, skinless chicken thighs

Instructions

Option to marinate chicken ahead of time:

  • Add mayo, Dijon mustard, maple syrup, paprika, garlic powder, salt and black pepper to a large freezer bag. Seal the bag and shake/squeeze to mix.
  • Add chicken to the bag with the marinade. Place the chicken in fridge and let marinate for a few hours up to 24 hours. You can also cook right away after mixing the chicken with the marinade.

Bake chicken:

  • Preheat oven to 400°F and spray a 9x13-inch baking dish with cooking spray. Line chicken in the dish in a single layer. Pour remaining marinade over the chicken.
  • Place in oven to bake for 15 minutes. Remove from oven and spoon some of the liquid from the dish over the top of the chicken. Rotate your dish, return to oven and continue baking until chicken is cooked through, about 10 minutes more.
  • After cooking, turn oven to broil for 2-3 minutes, until chicken has started to brown.

Notes

  • Sub olive oil for the mayo.
  • Store in fridge for 2-3 days.
