½cuprolled oats(plus an additional 1 Tbsp.)
1cuppeanut butter(plus 3 Tbsp. , divided)
½cuppure maple syrup (or honey)
3Tbsp.ground flax seed
3/4cupdark chocolate chips
½tsp.salt
Instructions
Line a 6x6-inch baking dish with parchment paper. You can also use a loaf pan.
In a blender or food processor, add rolled oats. Blend or process until you have a flour-like consistency. Set aside.
In a medium bowl, whisk 1 cup peanut butter and maple syrup or honey together. Add flax seed, stirring to combine, and let sit for 3-4 minutes.
Meanwhile, add dark chocolate to a microwave safe dish. Microwave until melted, stopping to stir every 30 seconds. Once chocolate is melted, stir in 3 Tbsp. peanut butter until combined.
Mix the oat flour and salt into the maple syrup mixture, stirring with a spatula or metal spoon until combined.
Press the flour mixture into prepared baking dish, pressing down firmly to make an even layer.
Carefully pour the melted chocolate mixture on top, using a spatula or metal spoon to create a smooth layer.
Place dish in freezer for 30 minutes. Remove from freezer and cut into bars. Option to add flaked sea salt on top. Enjoy!
