Ingredients

  • 1 Tbsp. olive oil (divided)
  • 1 small red onion (diced)
  • 1 medium zucchini (diced)
  • 1 pint baby tomatoes (halved)
  • 1 tsp. salt (divided)
  • 3 garlic cloves (minced)
  • 1 ½ lb. ground turkey
  • 1 tsp. Italian seasoning
  • ½ tsp. dried oregano
  • ¼ tsp. black pepper
  • ¾ cup kalamata olives sliced

Optional toppings:

  • crumbled feta
  • fresh parsley

Instructions

  • Heat large skillet over medium-high heat. Add ½ Tbsp. olive oil.
  • Once oil is hot, add red onion, zucchini, baby tomatoes and ½ tsp. salt and cook for 4-5 minutes. Stir in minced garlic and cook until fragrant, about 30 seconds.
  • Remove skillet from heat and place veggies on a clean plate. Return skillet and add remaining ½ Tbsp. olive oil.
  • Add ground turkey to the hot skillet and season with Italian seasoning, oregano, remaining ½ tsp. salt and pepper, and cook until browned, about 7-8 minutes, stirring with a wooden spatula to break meat apart.
  • Once turkey is browned, add cooked veggies back to the pan along with the kalamata olives and stir. Continue to cook for 2 more minutes.
  • Remove from heat and add optional crumbled feta and fresh parsley. Taste and add additional salt or pepper as needed. Enjoy!

Notes

  • This dish is great served alone, over brown rice or over couscous!
  • Bell pepper makes a great veggie swap if you don’t have the others on hand.
