Ingredients
1Tbsp.olive oil(divided)
1small red onion(diced)
1medium zucchini(diced)
1pintbaby tomatoes(halved)
1tsp.salt(divided)
3garlic cloves(minced)
1 ½lb.ground turkey
1tsp.Italian seasoning
½tsp.dried oregano
¼tsp.black pepper
¾cupkalamata olivessliced
Optional toppings:
crumbled feta
fresh parsley
Instructions
Heat large skillet over medium-high heat. Add ½ Tbsp. olive oil.
Once oil is hot, add red onion, zucchini, baby tomatoes and ½ tsp. salt and cook for 4-5 minutes. Stir in minced garlic and cook until fragrant, about 30 seconds.
Remove skillet from heat and place veggies on a clean plate. Return skillet and add remaining ½ Tbsp. olive oil.
Add ground turkey to the hot skillet and season with Italian seasoning, oregano, remaining ½ tsp. salt and pepper, and cook until browned, about 7-8 minutes, stirring with a wooden spatula to break meat apart.
Once turkey is browned, add cooked veggies back to the pan along with the kalamata olives and stir. Continue to cook for 2 more minutes.
Remove from heat and add optional crumbled feta and fresh parsley. Taste and add additional salt or pepper as needed. Enjoy!

This dish is great served alone, over brown rice or over couscous!
Bell pepper makes a great veggie swap if you don’t have the others on hand.
