Frozen Yogurt Power Bites

These frozen yogurt power bites are a creamy, crunchy and naturally sweetened snack packed with protein and energy. They are a perfect balance of healthy fats, protein and fiber. Make a big batch and freeze for a healthy grab-and-go bite. The options are endless from a kid-friendly snack, breakfast, post-workout fuel or just a sweet treat!

Equipment

  • 24 mini cupcake liners
  • mini muffin tray

Ingredients

  • 2 ¼ cups plain nonfat Greek yogurt
  • ¾ cups natural peanut butter
  • ¼ cup honey
  • ½ cup frozen blueberries
  • ¼ cup pumpkin seeds
  • ¼ cup dark chocolate chips (optional)

Instructions

  • Line a mini muffin tray with muffin liners and set aside.
  • In a medium sized mixing bowl, add the Greek yogurt, peanut butter and honey. Mix with a large spoon or spatula until combined well.
  • Add in frozen blueberries (no need to thaw), pumpkin seeds and dark chocolate chips. Stir until just combined. Mixture will be thick.
  • Using a small spoon, scoop yogurt mix into each lined muffin tin. You can lightly spray the spoon with cooking spray if you find it is too sticky!
  • Place muffin tray in freezer for 2-3 hours.
  • Once yogurt is frozen, remove the muffin tin from the freezer and let it rest for 5 minutes. Using a butter knife, gently remove each frozen yogurt bite from the tray and place in a freezer safe large Ziploc bag or plastic Tupperware. Return to freezer for storage for up to one month. When ready to eat, remove amount desired from freezer and let rest on the counter or plate for 4-5 minutes. The paper liner should be easy to remove at that time. Enjoy!

Notes

  • Fresh blueberries can be used in this recipe. Or you can use any other frozen berry or fruit!
  • Sub any other nut butter for the peanut butter — almond butter, cashew butter, etc.
  • Another fun addition would be chopped pecans or walnuts — fold ½ cup in with the blueberries.
