- 2 Tbsp. olive oil
- 3 cloves garlic (minced)
- 2 15-oz. cans cannellini beans (rinsed and drained)
- 1 Tbsp. dried oregano or 1 Tbsp. Italian seasoning
- 8-10 cups mixed greens (packaged or freshly gathered)
- 1 cup vegetable broth (or chicken broth)
- Salt and pepper to taste
Optional:
- red pepper flakes
- lemon juice
- grated Parmesan
In a large pot, heat olive oil over medium heat. Add garlic and cook for 30-60 seconds until fragrant.
Stir in cannellini beans, oregano or Italian seasoning, and a pinch of salt and pepper. Cook for 2-3 minutes.
Toss in greens and splash in the broth. Stir until greens wilt and everything is warmed through, about 5-7 minutes.
Taste and adjust seasoning. Serve as-is or top with a drizzle of olive oil, lemon juice or cheese.
