Easy Beans & Greens

Ingredients

  • 2 Tbsp. olive oil
  • 3 cloves garlic (minced)
  • 2 15-oz. cans cannellini beans (rinsed and drained)
  • 1 Tbsp. dried oregano or 1 Tbsp. Italian seasoning
  • 8-10 cups mixed greens (packaged or freshly gathered)
  • 1 cup vegetable broth (or chicken broth)
  • Salt and pepper to taste

Optional:

  • red pepper flakes
  • lemon juice
  • grated Parmesan

Instructions

  • In a large pot, heat olive oil over medium heat. Add garlic and cook for 30-60 seconds until fragrant.
  • Stir in cannellini beans, oregano or Italian seasoning, and a pinch of salt and pepper. Cook for 2-3 minutes.
  • Toss in greens and splash in the broth. Stir until greens wilt and everything is warmed through, about 5-7 minutes.
  • Taste and adjust seasoning. Serve as-is or top with a drizzle of olive oil, lemon juice or cheese.
