Dark Chocolate Energy Balls

These easy no-bake energy balls come together with oats, peanut butter, maple syrup, ground flaxseed and chia seeds for a satisfying, sweet snack. With pops of dark chocolate in every bite, they feel like a treat, but are made with ingredients you can feel good about.

1 1/2 cups rolled oats 3 Tbsp. ground flax seed 2 Tbsp. chia seeds optional 1/4 tsp. salt 3/4 cup natural peanut butter 1/4 cup plus 2 Tbsp. pure maple syrup 1 1/2 tsp. vanilla extract 1/3 cup dark chocolate chips Optional add-ins: hemp seeds, raisins, chopped walnuts, chopped pecans, shredded coconut
Line a large plate or cooking sheet with parchment paper.
Add rolled oats, ground flax seed, chia seeds and salt into a large bowl and mix well to combine.
Stir in peanut butter, maple syrup and vanilla extract. Mix until well combined. The mixture will be sticky. Then, fold in the dark chocolate chips.
Using clean hands, roll mixture into one-inch balls, and place each ball on the prepared surface.
Place balls in fridge for at least 30 minutes until they’re set.
Store in the fridge and consume within 3-4 days. Enjoy!
Any nut butter can be used. For a nut-free version, try sunflower seed butter.
Feel free to sub honey for the maple syrup or omit entirely.
