Ingredients

  • 1 medium cucumber (sliced)
  • 2 medium tomatoes sliced or wedged
  • 1 red or white onion (thinly sliced)
  • 1/4 cup white vinegar
  • 1/4 cup water
  • 2 Tbsp. olive oil
  • 1/2 tsp. black pepper
  • 1/2 tsp. kosher salt

Instructions

  • Toss all ingredients in a medium mixing bowl. Allow to sit for 30 minutes, stirring occasionally, for best flavor.
  • Serve!

For a more filling salad, layer with crumbled feta, avocado and grilled chicken.
