Cottage cheese meets oatmeal in this delicious, nourishing, protein-packed breakfast. The creamy cottage cheese and the hearty oatmeal come together effortlessly on the stovetop or in the microwave. It’s a simple, wholesome bowl that feels indulgent while supporting steady energy all morning.

Ingredients

  • 1 cup rolled oats
  • 2 cups reduced fat milk
  • 1/2 cup water
  • 1 Tbsp. maple syrup plus more for optional drizzle
  • 1/2 tsp. vanilla extract optional
  • 1 tsp. ground cinnamon
  • 1/4 tsp. salt
  • 2/3 cup reduced fat cottage cheese

Optional toppings:

  • additional milk, maple syrup, chopped walnuts, fresh or frozen berries

Instructions

For the stovetop:

  • Add the rolled oats, milk, water, maple syrup, ground cinnamon and salt to a small or medium saucepan. Add optional vanilla extract. Stir to combine well and turn the heat to medium-high.
  • Bring the mixture to a boil, then reduce heat to medium-low, maintaining a simmer. Cook, stirring often to prevent sticking to the bottom of the pan, for 8 or so minutes, until the oats have soaked up most of the liquid.
  • Once the oatmeal’s desired consistency is reached, turn off the heat and stir in cottage cheese. Ladle into two bowls and top with optional toppings. Enjoy!

For the microwave:

  • Divide the rolled oats, milk, water, maple syrup, ground cinnamon, salt and optional vanilla extract into 2 microwave-safe bowls. One at a time, cook on high for 60 seconds, watching closely to prevent contents from spilling over. Stir and return to microwave for an additional 30-60 seconds.
  • Once heated through, stir in 1/3 cup cottage cheese. Top with optional toppings and enjoy!

Notes

  • You can use all water or all milk for the liquid in this recipe.
  • Add hemp seeds, flax seeds or chia seeds for more variety.
  • Nuts, seeds, fruit and peanut butter make great toppings.
