(rib removed, chopped, washed and dried)

Apple Vinaigrette Ingredients:

red onion
(diced)

apple cider vinegar

Dijon mustard

olive oil

Instructions
Place kale in a large mixing bowl with orange zest, orange juice and salt.
With clean hands, massage kale until it loses some volume and turns bright green.
Stir in olive oil, apples, walnuts and cranberries. Mix well.
In a bowl, whisk together red onion, apple cider vinegar, honey, mustard, oil, and salt to make vinaigrette.
Toss salad in vinaigrette and serve.
