Equipment

  • 9x5-inch loaf pan

Ingredients

  • 1 ¼ cups whole wheat flour
  • ½ cup unsweetened cocoa powder
  • 1 tsp. baking soda
  • ½ tsp. salt
  • 2 overripe bananas (mashed)
  • ½ cup pure maple syrup
  • ¼ cup avocado oil (or melted coconut oil)
  • ¼ cup plain Greek yogurt
  • 2 eggs
  • 1 tsp. vanilla extract
  • 1 cup dark chocolate chips (divided, preferably at least 70% cocoa)

Instructions

  • Preheat oven to 350°F. Lightly grease a 9x5-inch loaf pan with cooking spray.
  • In a medium bowl, add flour, cocoa powder, baking soda and salt and whisk to combine.
  • In a large bowl, add mashed bananas, maple syrup, avocado oil, Greek yogurt, eggs and vanilla extract. Stir to combine.
  • Add dry ingredients to the bowl with wet ingredients and stir until combined, being careful to not overmix.
  • Gently fold in ¾ cup of dark chocolate chips.
  • Pour mixture into prepared loaf pan. Sprinkle remaining ¼ cup dark chocolate chips on top and bake in preheated oven for 45-55 minutes, until a toothpick placed in the center comes out with just a few wet crumbles. The top will spring back when lightly pressed.
  • Remove from oven and let cool. Slice and enjoy!

Notes

  • If you don't have Greek yogurt, you can use milk.
  • Other delicious add-in's: 1/2 cup chopped walnuts or pecans!
  • This bread tastes even more decadent the next day! Store in an airtight container for 2 days on the counter and an extra day in the fridge.
